Elaine's trees graced her with a small amount of Pendolino, which she milled separately. The notes were so enticing that she decided to bottle the oil as a single cultivar, rather than including it in the blend, Piero. 

As a Pendolino extra virgin olive oil this one is delicate. The bitterness is extremely light and the spiciness is delicate, as well. Yet, it is lively and it lingers long after the bitterness has faded. The aromas feature notes of almond, grass, and artichoke, with later, additional expressions of artichoke and almond in the finish.
