Mieli Thun Italian Wildflowers Honey. This honey is ideal for garnishing cakes and tarts -- and even crostata. Add a drizzle to ice cream, panacotta, and cheesecakes!

This is a wonderful sweetener for tea and an excellent blend-in for yogurt. On the thickness scale, this is in the middle. It’s not runny and yet is somewhat thick with some crystals.

 Have you ever wondered about how various honeys come to be? Andrea, an apiarist, travels with the bees. Together they travel to the south to gather nectar from orange blossoms, and to the north, to Tuscany, to gather nectar from the flowers of chestnut trees. 

Throughout Italy, honey is used in every region, and the production and classification is taken as seriously as with cheese and olive oil. Artisanal honey is a rare find in the U.S.

Italian honey is classified and labeled according to origin, variety of blossom, or method of extraction. The flavor and aroma of honey is specific to the variety of flora from which the nectar is gathered by the bees. As with wine and olive oil, the terroir also matters as the soil composition, climate, air quality and time of harvest impact the flavors, fructose levels, and consistency of the honey.
