Valserena is located in the Emilia Romagna region and is the oldest dairy in the Parma district. The milk used to make their exquisite Parmigiano Reggiano comes exclusive from the Serra family's farm, which has a rare herd made up exclusively of Sola Bruna (brown) cows. Of the hundreds of dairies that make authentic Parmigiano Reggiano DOP, only four have Sola Bruna cows, which produce a milk which is very rich in butterfat to give the cheese a richer flavor and creamier texture.
