This selection is from the Acetaia San Giacomo. In their acetaia, or vinegar factory outside of Modena, they craft their special vinegars. Starting with the grape must, or juice of the Trebbiano grape and three others, the process begins. The must is reduced down to a syrup is copper pots. When they reach the desired consistency the syrup is poured into wood barrels where it is aged. After a number of years each barrel is classified gold, silver, or red cap according to its quality. The vinegars are rotated through various types of wood barrels to give it its desired characteristics. This vinegar is truly wonderful gift.
Gold Seal San Giacomo Aceto Balsamico Tradizionale di Reggio Emilia, Gold Seal -- extravecchio-- is the most complex balsamic of the Gold, Silver and Red. This is fully extraordinary and complex, rich with notable harmonious aromas, and more sweet than sour. The structure is dense and persistent.
A most outstanding culinary experience, it is idea for savory and aged cheeses, berries (including raspberries, strawberries, and cherries), ice cream, and also as a notable, elixir-type sip from a spoon or glass at the end of a meal.
