Don Gioacchino is an extra virgin olive oil produced from a centuries-old olive oil grove in Puglia. The farm preserves 220-year-old Coratina trees, the dominant cultivar of the region. The selection is certified DOP Castel di Monte.

The name, Don Gioacchino, pays homage to Sabino Leone’s father, the founder of the farm.

This is a very complex and harmonious extra virgin olive oil, noted as gold with slight green hues. The green almond prevails on the nose accompanied by hints of rosemary and mint along with artichoke, chicory, and lettuces. The taste is very balanced with bitter and spicy definitely present and in harmony with each other with hints of wild chicory and bitter almond. Some note cinnamon and black pepper. It’s exuberant!


Best food pairings? This is enjoyed with tomato bruschette, seafood carpaccio, marinated tuna, bean soups, pasta with meat sauce, baked game dishes, and hard mature cheeses.

Coratina, from the master producer Salvatore Stallone, is an intensely Was $34.95. Best by December 2018.fruity oil.  The olives crushed are 100 % Coratina. Stallone's mill employs the latest technologies, and that milling provides the highest quality extra virgin olive oil with a high number of polyphenols. From the area north of Bari. 
The aroma is elegant and rich, with notes of herbs, almonds, sage, herbs, artichokes and cardoon. 
The taste is complex and noted for its persistence.  You'll note strong tones of bitter and pungency. 
Best food pairings? This is enjoyed with red meat, beans and bean soups, and grilled green vegetables. And, of course, bread.
