Olio di Roma IGP BIO is the absolute tops in maximum expression of the territory and local traditions, and it is produced organically.
To obtain the IGP designation, the “IGP Roma” oil must be produced, transformed and packaged in the defined geographical area and must possess certain characteristics strictly linked to the territory of origin. (Please note descriptions may be noted as PGI as it also translates).
This new delightful oil from Itrana olives (like Olivastro) is noted as emerald green, with warm golden reflections, and clear tones. In the nose there is an intense fruitiness with strong hints of green olive. The delightful profile is enhanced by complex vegetal notes, among which leaf, grass, artichoke, green tomato and apple stand out, along with broad character, lettuce, basil and celery. The finish yields notes of green almonds at the end.
Olio di Roma is recommended for a selection of appetizers, including lentils, raw meat carpaccio, soups, red meat, and above all for intense cheeses.
