The Ghiacciola “Claterna” extra virgin olive oil has an enveloping aroma with fresh herbaceous scents of artichoke and tomato leaf. The mouthfeel reveals a complexity that ranges from aromatic herbs to green citrus leaves, fresh almond, apple and green olive; the opening is sweet, followed by a sharp spiciness and remarkable persistence.
Recommended use is raw, served on carpaccio and fish tartare, boiled legumes, roast fish, and pinzimonio (fresh raw vegetables).
