Coratina is from his Cru line. Harvested in October and November and milled "absolutely" by Giorgio.

This monocultivar selection is decisive and enveloping, with a penetrating herbaceous character, with rich notes of artichoke and chicory. Taste it and you will know why Franci calls it powerful and elegant. This is a complex elixir with well defined bitter and spicy notes with long persistence and harmony.

The Cru selections from Franci are the best of the line - from the hills of Montenero d'Orcia.

Recommended pairings: raw with porcini mushrooms, lentils, beans, chickpeas, and vegetable soups. Ideal on red meats and with medium-aged cheeses.
