The popular selection, Ravida, has an aroma of freshly mown hay, which some describe as herbal and grassy. Due to the warm and sunny Sicilian climate, the olivesare picked early and the harvest is most often complete by the first days of November.
The oil is blended from three Sicilian olive varieties: Nocellara, a slightly fruity eating olive; Cerasuola, tasty and full-bodied and light-green; and Biancolilla, for distinctive color and fragrance.
Unfiltered, this oil is very low acidity, as well. We especially recommend it for cooking with fish and vegetables.
Gambero Rosso, has described Ravida as: “An exceptional blend...distinguished for its complexity and freshness...green notes of tomato leaf on the nose followed by balsamic notes of cypress... almond flavor in the mouth... and a perfect balance between bitterness and pungency.
